🌽 Cornmeal Peckin’ Muffins

Soft little muffins full of cornmeal goodness — perfect for spoil’n your ladies after a long day of layin’.

Now, I don’t know about you, but my hens get mighty happy when they see me comin’ with a tray of these golden muffins. They’re sweet, soft, and made from the same stuff you’d find in Grandma’s cornbread — minus the salt and sugar, of course!

🧺 Ingredients:

  • 1 cup cornmeal
  • ½ cup whole wheat flour
  • 1 egg
  • ½ cup unsweetened applesauce
  • ½ cup warm water

🍳 Directions:

  1. Preheat your oven to 350°F (175°C).
  2. Mix cornmeal and flour together in a bowl.
  3. Add egg, applesauce, and warm water, stirrin’ until smooth and thick like pancake batter.
  4. Spoon into greased mini muffin tins or drop dollops on a parchment-lined tray.
  5. Bake 20–25 minutes, until firm and lightly golden.

Cool before servin’. Store in the fridge for a few days — or freeze for a rainy afternoon treat.
