Rolled oats, grated carrots, and a drizzle of molasses baked till golden.
Well now, these little cookies are a classic around my barn — sweet, chewy, and full of that earthy carrot goodness horses can’t get enough of. They smell so good, even I’ve been tempted once or twice (but don’t worry, I let the horses have ‘em).
🧺 Ingredients:
- 2 cups rolled oats
- 1 cup grated carrots (about 2 medium carrots)
- ¼ cup molasses
- ¼ cup unsweetened applesauce
- 1 tablespoon vegetable oil
🍳 Directions:
- Preheat that oven to 350°F (175°C).
- In a big ol’ bowl, mix oats and grated carrots together.
- Add in molasses, applesauce, and oil. Stir ‘til you get a sticky dough that holds together.
- Drop spoonfuls on a parchment-lined baking sheet and flatten ‘em just a bit.
- Bake about 20–25 minutes, or ‘til golden and firm around the edges.
Let ‘em cool before servin’. Store in an airtight jar for up to a week.
