This one’s a good way to use up leftover garden bits. It’s healthy, hearty, and has a nice chew — kinda like a chicken casserole, if such a thing existed.

🧺 Ingredients:

  • 1 cup rolled oats
  • ½ cup shredded carrots or zucchini
  • ½ cup chopped greens (spinach, kale, or beet tops)
  • 1 egg
  • ¼ cup unsweetened applesauce

🍳 Directions:

  1. Preheat oven to 350°F (175°C).
  2. Mix oats, veggies, and greens in a bowl.
  3. Add egg and applesauce, stirrin’ ‘til everything sticks together.
