Ingredients
For the Meatloaf:
- 1½ lbs ground beef (or mix with ½ lb ground pork for extra flavor)
- 1 cup breadcrumbs or crushed crackers
- ½ cup milk
- 1 small onion, finely chopped
- 1 egg, beaten
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the Tomato Glaze:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- ½ tsp smoked paprika (optional)
Directions
- Preheat & Prep: Warm your oven (or covered grill) to 375°F. In a large bowl, mix breadcrumbs and milk — let ‘em soak a minute. Add meat, onion, egg, ketchup, Worcestershire, and seasonings. Mix gentle-like — don’t mash it to death.
- Form the loaf: Shape into a loaf and set in a greased cast-iron skillet.
- Make the glaze: Stir together ketchup, brown sugar, vinegar, and paprika. Spread half over the meatloaf.
- Bake: Pop it in for 45 minutes, brush with the rest of the glaze, and bake another 10–15 minutes, till the top’s sticky and caramelized.
- Rest & Slice: Let it rest 10 minutes before slicing.
Bubba’s Tips
- Cracker crumbs make it taste extra old-fashioned.
- For smoky flavor, toss a handful of wood chips in the grill if cookin’ outside.
Storage: 3–4 days in the fridge, or freeze slices up to 2 months.
